My Healthy Sandwich

Here’s my breakfast today:

2 slices of toasted sprouted-wheat (flour-free) bread. One slice is an open sandwich with tuna fish, a squeeze of Japanese mayo, avocado and some toasted sesame seeds sprinkled on top.  Another slice is spread with Steffi’s sugar-free peanut butter and my mum’s homemade pineapple jam.

My breakfast must end with a cup of Japanese green tea.

Also had a free-range egg (gave the egg yolk to Baby C), a glass of low-fat milk with caffeine-free coffee, some fruits (I eat fruits before anything else as fruits musn’t be eaten with food) and some biscuits. A very heavy breakfast eh? This can fill me up until 1pm and I won’t even feel hungry by then. I normally have quite a heavy breakfast, a light lunch and a dinner that’s not too heavy or light.

The Wonders Of Lemon Grass Or Serai

Did you know that the lemon grass or serai or heong mau (in Cantonese) that some people find as nuisance as they tend to grow like lalang have many health benefits? It is anti-cancerous and anti-bacterial and can treat a range of ailments. Recently I have been receiving emails from friends on how effective lemon grass is in killing cancer cells. My relatives have started to make lemon grass drinks and yesterday, I followed suit and made a pot of lemon grass concoction.

Here’s some interesting facts on lemon grass:

Citronella is known for its calming effect that relieves insomnia or stress. It is also considered as a mild insect repellant. But more than scent, tanglad or lemon grass provides a lot of health benefits. Studies have shown that the lemon grass has antibacterial and antifungal properties. Mixed with pepper, it’s a home therapy for menstrual troubles and nausea. Drank as tea, it is an effective diuretic. When it comes to pets, citronella is used to neutralize excessive barking of dogs. Since dogs hate citronella, it is sprayed to dogs to prevent them from barking or just to lessen the behavior.

The Lemon grass is a good cleanser that helps to detoxify the liver, pancreas, kidney, bladder and the digestive tract. It cuts down uric acid, cholesterol, excess fats and other toxins in the body while stimulating digestion, blood circulation, and lactation; it also alleviates indigestion and gastroenteritis. It is said that lemongrass also helps improve the skin by reducing acne and pimples and acts as a muscle and tissue toner. Also, it can reduce blood pressure. Just make a concoction by boiling some lemon grass leaves, let it cool for a while and drink the liquid.

The leaves and base of this tender perennial are used as a food flavoring, particularly in fish and poultry dishes, and its essential oils are used medicinally. Its distinctive flavor balances hot chillies and contributes to the elaborate, multi-layered flavors of many dishes in South East Asian cuisine.

As the long, thin, grey-green leaves are tough and fibrous, the outside leaves and the tips are usually chopped very finely or discarded from the dish before it is served. The base is often ground. Citral, an essential oil also found in lemon peel, is the constituent responsible for its taste and aroma.

Lemon grass, also known as Sweet Rush and sometimes called Fever Grass in the Caribbean, can be used as a remedy for ague, fevers, and colds.

Filipino ingenuity has produced a commercial beverage made from lemon grass. A concentrate composed of lemon grass juice and muscovado sugar bottled in attractive design.

A recent study by the Food and Nutrition Research Institute of the department of Science and technology ( DOST ) claims that every 100g of edible tanglad when boiled can contain up to 24.205 micrograms of beta-carotene the anti-oxidant that scientists believe can help prevent cancer. Another DOST study shows that lemon grass oil has the potential as a tropical eye medication against keratomycosis, an inflammation of cornea often associated with burning or blurring of vision.

The lemon grass drink that my mil made yesterday. All she did was boiled a pot of water. When it’s boiling, she put in the lemon grass and let it steep in the hot water for about half an hour. You can drink it hot but it tastes better and really refreshing when chilled. My 2 older gals who love cold drinks have no problem drinking chilled lemon grass drink. Even Baby C drinks it and according to the article, lemon grass can detoxify the kidney and bladder, which is good for her.  It can even help to stimulate lactation so, it’s good for moi too since Baby C is still breastfed.

Organic Seaweed, Grains & Mixed Vegetables

I bought a bottle of organic dried seaweed, grains and mixed vegetables from the organic shop the other day.  I meant to buy it for Baby C, to sprinkle them on her porridge.  On reading the label, I decided not to give it to her as it contains organic raw sugar and organic sea salt.

The ingredients include seaweed, spinach, cabbage, purple sweet potato, organic wheatgrass, organic ryegrass, organic barley grass, organic buckwheat grass, soybean protein and sunflower oil.

That’s one of the ways I eat this seasoning powder – by sprinkling them on my hardboiled egg every morning. It can also be sprinkled on porridge and  bread. A bottle cost RM27.50 but this organic shop is having a stock clearance for this and sold it at RM20 a bottle. I find it tasty but my kids wouldn’t want to try it, haih!

Lean Food Premium Organic Yoghurt

This is the organic blueberry yoghurt that I bought for Baby C. It’s a tad sour and my sweetie-pie didn’t like it. I had to put some homemade pineapple jam to sweeten the yoghurt. But I really like this yoghurt, especially the mango flavored one. This yoghurt is really smooth and has generous amount of fruits.

Next time, I’ll just get my sweetie-pie strawberry yoghurt by Dutch Lady since she likes this brand of yoghurt.

Fish, Fish And More Fish

Whenever I have buffet lunch or dinner, the dish that I will attack first is more often than not fish. I normally attack the salmon, cod fish, unagi (Japanese eel), mackeral and pomfret – the expensive fish and fish that are high in Omega 3 fatty acids. I need plenty of DHA (one of the acids from Omega 3) coz after giving birth to 3 angels, I find my memory failing me many times and I need to stock up on my DHA intake so that my brain will function better!

I can never resist my temptation when I see plates and plates of salmon cooked in a variety of styles being served at the buffet line like this one:

That’s the salmon fish served at the buffet lunch at Sudu Coffee House @ Hilton Sentral Hotel.

Fatty fish fills your tummy up very quickly and it’s a good thing coz you will have very little space left to gorge on empty calories and desserts!

Premium Organic Yoghurt

Hubby bought me a cup of premium organic mango yoghurt yesterday. It’s absolutely tasty and the smoothest yoghurt I’ve ever tasted. It’s thick and rich and even half a cup of it was enough to fill my tummy up.

See the thick rich mango puree on top of the plain yoghurt?  It’s soooo tasty.  Even babies can eat it as it’s made from organic milk. Try it and you’ll love it!

Something Light For Lunch

My throat still hurts today and I am also coughing with lots of thick yellow phlegm. I don’t have much appetite to eat, so I just drank some soup and ate half a cup of organic yoghurt for lunch. The Chinese say that snow fungus is good for the lungs so I boiled a pot of soup made up of snow fungus, Chinese white almonds, dried longan meat, red dates, wolfberries or goji berries, yoke choke (Solomon’s Seal) and pork ribs.

Organic Cold Soba Sauce

I bought a bottle of organic cold soba sauce from the organic shop last week.   It’s free of preservatives, colorings, sugar and other chemical additives.   Check out the ingredients in the label on the bottle here:

I use the soba sauce to prepare cold green tea noodles for Alycia and Sherilyn. They, especially Sherilyn are absolutely crazy over the cold noodles. I prepare this noodles for them at least 2-3 times in a week. It’s really easy and fast to prepare, not to mention healthy too.

Organic green tea noodles with organic cold soba sauce and toasted sesame seeds.
The cold soba sauce needs to be diluted with some water before pouring into the chilled noodles. No heating is needed for the sauce.

I can also add 1 tablespoon of the cold soba sauce onto my steamed Anzen organic tofu. It’s simple and fast to cook and wholesome too. Baby C loves tofu! Hopefully she’ll still love tofu when she grows up.

Verdict of the cold soba sauce : delicious…. my 2 picky eaters love it!  Will definitely buy again.  Costs RM12.90 a bottle.

My Wholesome Toasts

The other day, I bought a tub of Arla soft cheese with yoghurt.  It’s the first time I’d seen a cheese spread that comes with yoghurt.  This cheese spread is very light, has no preservative, low in sodium and tastes great.  I’ve been eating it almost everyday with my toasts.

That’s my breakfast yesterday :

Multi-grain and seed toasts with Arla cheese-yoghurt spread, organic ABC (almond, brazil nuts and cashew nuts) bread spread and sugar-free marmalade jam.

What a wholesome and satisfying breakfast that was for me. I for one, find it hard to eat heavy stuff like nasi lemak, noodles or other oily stuff for breakfast. When it comes to breakfast, I can never get bored with toasts and a wide variety of jams and bread spreads.
