My Light And Healthy Lunch

When I am in no mood to cook a proper meal for the kids for lunch, they get to eat green tea noodles with cold cha soba sauce and fried eggs, sandwiches or toasts. As for me, I’ll either eat toasts and sandwiches (which are my favorites) or simple yoghurt with muesli and lots of nuts and seeds.

Here’s one of my lunches :

Anlene high calcium mixed berries yoghurt with muesli, cashew nuts, pine nuts and roasted almonds.

Anlene strawberry yoghurt with pine nuts, cashew nuts and almonds.

I know some of you will be saying “OMG, what yucky lunch! How can she swallow such stuff?” but I tell ya, it’s a matter of getting used to healthy eating.

  1. Elaine, Michelle, Sheoh Yan… I also nibbled on a couple of high fibre oat crackers on top of the bowl of yoghurt. I normally have a heavy breakfast (consisting of fruits, an egg, toasts, biscuits, milk and green tea), so I eat a light lunch and dinner.

  2. Sometimes I have that for brekkie. I also add in bran buds(1/3 cup is enuf for a day’s worth of fibre). Lunch needs to be more substantial! Just have to be a little cautious with the nuts as they do contain quite a bit of fat.

  3. not yucky at all, i also love these. but i only tend to eat like this at hotels that i’m staying (be it for holiday or work) as they usually serve these for breakfasts. too lazy to buy them for home as they will usually be forgotten in the fridge/cupboard.
